Funky Bear Bistro Parachute, Colorado

The old saying locals know best came into fruition on Friday evening. My travels consist of local inside information from all over the world, especially with my post-it note travels. My last pit stop of my Colorado trip was in Parachute, Colorado. I asked the local individual at the hotel, and they provided me a hidden gem of dining in Colorado.
They told me about a dining spot that wasn't even on my radar. The Funky Bear Bistro is a must if you're passing through Parachute, Colorado. The food is excellent, and the menu ranges from soups, salads, appetizers, sandwiches, and entree dishes. For starters, I had their Tomato Bisqu Soup. The soup had so much rich flavor and had a great velvety texture to it. The main attraction was the entree with a Ten Ounce Ribeye served with Grilled Asparagus and their Parmesean Fries. The Ribeye was cooked to a perfect medium and well seasoned. The flavor was delicious, and the cut of the steak was very tender. Additionally, the fries did not disappoint along with the grilled asparagus. For local beer, I had a Dark Wheat Ale from The Dirty Hippie Brewery based out of Palisade, Colorado. The service was fantastic and has a very quaint ambiance to it.
Parachute, Colorado is located about three and a half hours west of Denver. I found this location great as a pit stop because you're also only two hours away from Moab, Canyon Lands National Park, and Arches National Park. Additionally, it's only an hour and a half away from Aspen, Eagle, Vail, and other great towns in Colorado. For hotels, I stayed at The Grand Vista Parachute. The hotel is only located about short distance from the interstate. The rooms were clean and the beds were very comfortable. If you're traveling from Utah to Denver or vise versa along Interstate 70, then add a stop for great dining at The Funky Bear and Parachute, Colorado. #ridingwithkurt
